- Mince up your celery and onions into small pieces. Since these are going to remain raw you want them pretty small. Who wants to bite into a big chunk of raw onion? Not this girl.
- Next, chop up your hard boiled eggs. You’ll notice in the picture I cheated and bought pre-packaged hard boiled eggs. I know I know but I always screw up hard boiled eggs, I don’t know why (they are my nemesis, damn you food in a shell that I can’t tell if you are under or overcooked! Why does everybody say it’s so easy! Argh) but you can certainly substitute eggs you’ve boiled yourself. Also, if you have successfully boiled eggs yourself please comment your recipe below and tell me your secrets….woe is me. In any case, dice those eggs up.
- Throw your veggies and your eggs into a mixing bowl (ok so maybe place them gingerly, I may have celery all over my floor….tiny tiny celery….) and add the other ingredients in. If you prefer a smooth pureed egg salad to a chunky one you could put this mixture into a food processor and pulse it a few times. I like mine chunky so I just mix everybody together until everyone has made friends and looks good.
- This recipe makes about two servings so dish up about half. I like to cut my bread up into wedges since I’m only having one slice and use the egg salad like a dip. Spread a little on the bread, shove in your face and get mayo on your nose, you get the idea. It’s delicious! Also, if you’re feeling extra fancy throw a little sprig of cilantro or whatever fresh herb you have hanging out in your fridge. Makes it look like you care and gives it another color.
How to Make a Simple Egg Salad Recipe
Some days you just need life to be easy. You don’t always have the time to whip up a four course meal for lunch? Know what I mean? That’s how this simple egg salad recipe came to be. I had to take a look in my fridge and come up with a concoction because it was busy. Turns out it was the best egg salad ever and super simple!
The trick to making this the a truly simple egg salad recipe is that I cheat and buy pre-boiled hard boiled eggs. You would figure someone who loves cooking as much as I do and adores challenging new cuisines and exotic ingredients would have the basics down pat right? WRONG. Hard boiled eggs are my nemesis….I’ve tried and failed so many times….so many ruined dozens. I have my days where I’m up to trying again but it seems I continuously fail. Perhaps you can tell me what I’m doing wrong? Please tell me your fail safe hard boiled egg recipe in the comments…I need help. In any case, since we love hard boiled eggs so much, and I’m inept lol, I buy them in the bag. This way I just have to grab them and mince them up to make simple egg salad.
You’ll notice another secret ingredient in the pictures as well…chili garlic sauce from the asian market. Lots of people add tabasco or some sort of hot sauce to their egg salad but I think the zingy and lovely flavor of the chili garlic sauce really gives this egg salad that “Mmmm what is that?” flair that you can’t get with just anything.
It’s easy as dump everything into the bowl from there and mix it up. I like to serve it with some toast or as a sandwich. Craving an easy meal, super simple egg salad to the rescue!!
